Chicken Salad Sandwiches!

We made some chicken salad for the first time, and if I'm allowed to say so, it turned out great. And it was really easy to make!

All you need to do is mix together the following ingredients:
  • 2 Chicken Breasts, poached (which basically means to cook in liquid over low heat - this keeps the chicken nice and moist!)
  • 1/2 Cup halved red grapes
  • 1/3 Cup chopped celery
  • 1/4 Cup chopped mandarin oranges (after chopped, use a paper towel to soak out the leftover juice)
  • 1/4 Cup chopped scallions
  • 2 Tbsp Mayonaise
  • 1/2 Tbsp Honey Mustard
  • Black Pepper to taste
