We made some chicken salad for the first time, and if I'm allowed to say so, it turned out great. And it was really easy to make!
All you need to do is mix together the following ingredients:
- 2 Chicken Breasts, poached (which basically means to cook in liquid over low heat - this keeps the chicken nice and moist!)
- 1/2 Cup halved red grapes
- 1/3 Cup chopped celery
- 1/4 Cup chopped mandarin oranges (after chopped, use a paper towel to soak out the leftover juice)
- 1/4 Cup chopped scallions
- 2 Tbsp Mayonaise
- 1/2 Tbsp Honey Mustard
- Black Pepper to taste
Jeremy and I ate at Daisy Cafe and Cupcakery last Saturday, and it was SUPER DELICIOUS!
The atmosphere is light and contemporary. It was bustling with people's voices, but we were seated immediately in the "Dasiy Room". They have crazy specialty cupcakes, like lemon cake with blueberry frosting, and carrot cake with cream cheese frosting, as well as your old stand-by's.
For lunch, I got the "Sloppy Jose" - a mexican take on a sloppy joe, made with chorizo mixed with carrots, onions and green peppers. The sandwich was HUGE, and, for me, had just the right amount of spice.
Jeremy got a Chicken Chutney sandwich, that had chicken breast and some carmelized onions. Also very good!
The side items are very unique, such as Vegetable Slaw and Orzo-Havarti salad.
Overall I'd definitly recommend this local gem to everyone. Who doesn't like a good cupcake?!
